- Tapioca75 g
- Milk500 ml
- Coconut milk250 ml
- Salt5 g
- Eggs3 unit(s)
- Condensed milk250 ml
- Shredded coconut50 g
- Demerara sugar (syrup) to taste
- Boil 125 ml of coconut milk and 300 ml of milk. Add the salt. After boiling, turn off the heat, add the tapioca, beating with a whisk. Set aside for 30 min
- In another bowl, beat the eggs well with the condensed milk. Add the coconut. Add the rest of the coconut milk and whole milk. Mix.
- When the tapioca is hydrated, add it to the mixture in the bowl.
- Grease a small mold with a hole using caramelized sugar syrup (just sugar and water on the heat until caramelized).
- Bake at 180 C for about 2 hours.
