Tapioca cake with dulce de leche

- Granulated tapioca (only works with this one)250 g
- Boiling milk400 ml
- Coconut milk100 ml
- condensed milk1/2 can(s)
- Shredded Coconut70 g
- Sugar4 tablespoon
- Dulce de leche200 g
- Mix all the ingredients in a bowl, except the dulce de leche. Let it rest in the fridge for about 1 hour.
- The dough should be firm but moldable. Take a 20 cm baking dish greased with oil and place half the dough in the bottom.
- With the help of a spoon, open a corridor in the middle and place spoonfuls of the dulce de leche in the middle.
- Cover with the rest of the dough and take it to freeze for at least 5 hours until it's firm. TIP: use a firmer dulce de leche, so you don't run the risk of it running all over the middle of the cake.
