Tapioca cake with dulce de leche

  • Granulated tapioca (only works with this one)250 g
  • Boiling milk400 ml
  • Coconut milk100 ml
  • condensed milk1/2 can(s)
  • Shredded Coconut70 g
  • Sugar4 tablespoon
  • Dulce de leche200 g
  1. Mix all the ingredients in a bowl, except the dulce de leche. Let it rest in the fridge for about 1 hour.
  2. The dough should be firm but moldable. Take a 20 cm baking dish greased with oil and place half the dough in the bottom.
  3. With the help of a spoon, open a corridor in the middle and place spoonfuls of the dulce de leche in the middle.
  4. Cover with the rest of the dough and take it to freeze for at least 5 hours until it's firm. TIP: use a firmer dulce de leche, so you don't run the risk of it running all over the middle of the cake.
