- Separate the yolks from the whites.
- In a container suitable for bain-marie, stir the sugar and the whites until the sugar melts over low heat, being very careful not to cook the whites.
- Put it in the mixer and beat until the snow point. Color to your liking.
- Place in a pastry bag and make the meringue the size and shape you prefer. Putting them in a shape with parchment paper.
- Place in the oven at 80° for 3 hours.
