Boiled Sweet Potato370 g
Eggs3 unit(s)
Demerara sugar1 cup
Oat flakes1 cup
Grated unsweetened coconut1 cup
Milk or water1 cup
Corn starch1 tablespoon
Cinnamon powder to taste
Vanilla to taste
Chemical Yeast1 tablespoon

In a blender, beat the eggs, demerara sugar, milk or water, cornstarch, boiled sweet potato, vanilla, cinnamon powder and a pinch of salt;
In another container, mix the oat flakes, the unsweetened grated coconut and the yeast;
Mix everything and put it in a greased shape;
Bake in a preheated oven at 180 degrees for about 40 minutes.
Once ready, I sprinkled grated coconut and cinnamon powder on top.
