- Large Pokan type bergamots3 unit(s)
- Crystal sugar600 g
- Water300 ml
- Sugar to finish1 cup
- Peel the bergamot. Discard the fruit.
- Remove the white skin from the shell, using a very fine-tipped knife.
- Cut the rind into even strips.
- Soak in clean water, changing the water whenever possible, overnight.
- ooze Boil the cones in enough water to cover them. ooze Repeat the process three more times.
- Bring the sugar, water and the rinds to the fire and let reduce until they dry almost completely.
- Place on a plate and cover each cone with sugar. Cool and pack.
- It can be frozen. Use as an accompaniment to coffee or tea or to perfume cake or pies.
