- Wheat flour300 g
- Butter150 g
- Confectioner's sugar4 tablespoon
- Almond powder50 g
- Whole milk250 ml
- Corn starch50 g
- Sugar4 tablespoon
- Egg Yolks4 unit(s)
- Vanilla to taste
- Fresh Strawberries400 g
- Fresh cream300 g
- Whole egg1 unit(s)
- Cold water1 tablespoon
- Icing sugar for garnish to taste
- Clean the strawberries and reserve.
- Mix with your fingertips the flour and the cold butter in cubes, forming a thick crumb.
- Add vanilla to taste, icing sugar and whole egg. Add the ice water. Mix until all ingredients are added.
- Wrap in plastic wrap and refrigerate for half an hour or more.
- Roll out the dough on a flat and floured surface, using a rolling pin.
- Cover the bottom of a detachable form with the dough.
- Refrigerate for another half hour or so.
- Cover the bottom of the dough with parchment paper. Add beans. Heat the oven to 200 degrees. Place the mold in the oven and bake until it starts to get golden around the edges.
- Remove beans and paper. Return the pan to the oven to brown the bottom for a few more minutes. Reserve.
- Separately, boil the milk and vanilla in a heavy-bottomed pan. Separately, beat the yolks and sugar. Add the starch and vanilla.
- Pour a cup of hot milk over the beaten egg yolks.
- Return the mixture to the heat and stir constantly until it thickens.
- Remove from heat and cover the surface with cling film to prevent a crust from forming. Reserve.
- Whip the ice cream in the mixer. Add to the cooled pastry cream.
- Cover the bottom of the previously baked dough with the cream.
- Cover the cream with the strawberries.
- Sprinkle with icing sugar when serving.
