- Chopped Strawberries350 g
- Lemon Juice20 ml
- Demerara sugar for the jelly3 tablespoon
- Water100 ml
- Mix for chilled whipped cream200 ml
- In the mixer, I added the eggs (I sifted the yolks beforehand) and the sugar and beat for 6 minutes until it doubled in volume. I added the flour, vanilla essence and baking powder and gently mixed with a whisk, lined the bottom of the mold with baking paper, poured the dough and took it to the oven for 35 minutes.
- In a pan I put the strawberries, demerara sugar, water and the lemon juice, I took it to the fire for 12 minutes until it reduced and had the consistency of jelly.
- Whipped the whipped cream until it was firm. I waited for the sponge cake to cool and divided it into three equal parts. I made a layer of whipped cream and on top a layer of jam and repeated the process, decorated the cake with icing sugar and strawberries.
