  1. Place the whites and sugar in a saucepan and heat over low heat for approximately three minutes, stirring with a spoon until well mixed. Then put this mixture in the mixer and beat until it is very consistent and firm. If you want add the lemon drops and beat again. Then place in a pastry bag with a tip of your choice and on a baking sheet lined with parchment paper make the sighs. Bake in a preheated oven at 180° until lightly golden. The secret to keep the meringues dry and crispy is to place a spoon or clip between the oven door, allowing it to stay ajar, thus allowing the meringues to be crispy and dry.
