  • Liquigel red food coloring1/2 tablespoon

  • Juice of ½ lemon. to taste
  • whole milk1 teaspoon
  • wheat flour150 g
  • chemical yeast2 g
  • cocoa powder2 g
  • salt1 g
  • unsalted butter65 g
  • sunflower oil45 g
  • sugar150 g
  • sodium bicarbonate2 g
  • white vinegar1/2 tablespoon

  • condensed milk1/2 can(s)
  • sour cream1/2 can(s)
  • cream cheese2 tablespoon
  • unsalted butter Fresh strawberries1/2 tablespoon
  1. 📍 Dough Mix the sifted juice of ½ lemon in the milk and set aside.
  2. Preheat the oven to the highest temperature.
  3. Sift the wheat, yeast, cocoa, salt and set aside.
  4. Beat the butter, oil and sugar in a stand mixer until pale and creamy.
  5. Add the eggs, one at a time, incorporating well until a homogeneous cream is formed.
  6. Whilst beating the cream, mix the coloring and essence well in ¾ of the milk curdled by the lemon.
  7. Decrease the speed of the mixer and incorporate the dry mixture in three additions, alternating with the liquid mixture.
  8. When necessary, turn off the mixer and remove whatever remains on the side of the bowl, incorporating it into the dough.
  9. Finally, mix the bicarbonate with the vinegar and add to the dough, mixing well with a spatula.
  10. Pour the dough into the greased shape with oil.
  11. Reduce the oven temperature to 160ºC and place the cake to bake until the toothpick test.
  12. Allow to cool for 5 minutes.
  13. If necessary, run a knife around the dough, unmold.
  14. While the cake cools, prepare the frosting.
  15. 📍 Coverage Add the condensed milk, the cream, the cream cheese and the butter, bring to a medium heat, stirring constantly, until it starts to unglue from the bottom of the pan, at the point of soft brigadeiro.
  16. Pour still warm over the cavity of the cold cake.
  17. Wait for the frosting to cool and decorate with fresh strawberries to taste.
  18. Tip: the cream cheese on the frosting can be substituted for curd.
