- Purple Sweet Potato1 kg
- Refined sugar800 g
- Cook or bake the potatoes with the skin on. Peel and mash well.
- Put it in a pan, add the sugar, take it to the low fire stirring well until it unglued from the bottom of the pan, on average 30 minutes.
- Model as you wish, but making it in the shape of quenelles (passing from one spoon to another) is very cute.
- Place on an oiled baking sheet and place in the sun to dry, covered with a tulle. Note: the time of sun is very relative, in this recipe, it can take 1 to 2 days for them to be dry on the outside and soft on the inside. Store in a closed pot.
