- lemon juice1/2 unit(s)
- Black raisin1 unit(s)
- Cinnamon powder1 unit(s)
- Wash and peel the apples. Remove the seeds and cut them into thin slices.
- Squeeze the lemon juice over the slices so they don't brown.
- Place the slices in a pan, add the sugar and place over medium-low heat.
- If necessary add a little water (1 to 3 tablespoons) and cover the pan.
- Leave to cook on low heat until they are falling apart.
- Turn off the heat and mash the apples with a fork until they become a puree. Add the cinnamon powder and mix well. Add the raisins and mix gently.
- Taste the sugar and, if necessary, add more. Let it cool before using it on puff pastry or whatever you want.
