  • Demerara sugar500 g
  • Water0.5 cup
  1. Peel the pineapple. Reuse the peels and make a tea by adding ginger zest and lemon juice.
  2. Chop the pineapple, removing the central core. Whisk the sugar and water in a food processor. Transfer to a pan and cook over medium heat for about 20 minutes.
  3. Cut the pepper into strips, removing the seeds, if you want less spicy. Add to the jam and let it cook for another 5 minutes. See the jelly point. Is ready!!
