  • Grated Coconut2 cup
  1. Peel the pineapple, remove the middle to avoid bittering and chop into small pieces. I put it in filtered water high enough to cover them and another cup of sugar. Put to cook on high heat
  2. In another pan, make a caramel syrup with 3 cups of sugar and 2 cups of water. Reserve.
  3. Add this syrup to the cooked pineapple and leave it on the fire until the syrup thickens, for about 20 minutes.
  4. Add grated coconut and let it cook for another 10 minutes.
  5. Turn it off and put it in a glass pot for better conservation. Take it to the fridge after it's cold.
