- Crystal sugar100 g

- Fresh cream250 ml

- ✔️Pear with wine Peel the pears, using a vegetable peeler, keeping the stem and seeds. In a pan, add the wine, sugar, orange and lemon zest, cinnamon, cloves, anise and nutmeg, leave on medium heat, stirring occasionally to dissolve the sugar. When it starts to boil, lower the heat and add the pears, cooking for 20 minutes (test the point with a toothpick, which should go in soft until the end). Once the pears are ready, remove them and let them cool, continue with the wine on low heat, until reduced by half and become a syrup. Reserve
- ✔️White chocolate whipped cream Whip the cream until it becomes a whipped cream (it must be cold). Chop the white chocolate in a glass or porcelain bowl and melt in the microwave every 30 seconds, stirring in between. 1 minute will be enough to completely melt. Place 4 tablespoons of whipped cream in the chocolate, mix, and then add the chocolate to the rest of the whipped cream.
- ✔️Finishing Chop the chestnuts finely. In a skillet, brown the chestnuts and let them cool. Cut the pears in half lengthwise and serve with the white chocolate whipped cream, the wine syrup and the chestnuts.
