- Erythritol1/2 cup
- Butter or coconut oil3 tablespoon
- Shredded Coconut1 tablespoon
- Vanilla Essence to taste
- Chocolate 70% cocoa or more to taste
- Chemical Yeast1/2 teaspoon
- melt the butter
- Add the egg and vanilla essence Mix
- Add the almond flour, erythritol and grated coconut. mix everything very well
- Finally, add the yeast and mix everything very well (you can use your hands)
- Then make small balls and flatten
- Place the cookies on a non-stick baking sheet or one lined with parchment paper.
- Bake in a preheated oven at 180°C for approximately 15 minutes.
- If you want, after the biscuit is cold, melt the 70% chocolate and spread it over the biscuits with the help of a spoon. IMPORTANT: if it is premium chocolate, you will have to temper it or use chocolate coating. Otherwise the chocolate will not harden.
- Wait for the chocolate to harden and then just enjoy it without feeling guilty! ;)
