  • Erythritol1/2 cup
  • Butter or coconut oil3 tablespoon
  • Shredded Coconut1 tablespoon
  • Vanilla Essence to taste
  • Chocolate 70% cocoa or more to taste
  • Chemical Yeast1/2 teaspoon
  1. melt the butter
  2. Add the egg and vanilla essence Mix
  3. Add the almond flour, erythritol and grated coconut. mix everything very well
  4. Finally, add the yeast and mix everything very well (you can use your hands)
  5. Then make small balls and flatten
  6. Place the cookies on a non-stick baking sheet or one lined with parchment paper.
  7. Bake in a preheated oven at 180°C for approximately 15 minutes.
  8. If you want, after the biscuit is cold, melt the 70% chocolate and spread it over the biscuits with the help of a spoon. IMPORTANT: if it is premium chocolate, you will have to temper it or use chocolate coating. Otherwise the chocolate will not harden.
  9. Wait for the chocolate to harden and then just enjoy it without feeling guilty! ;)
