- Bring the water and butter to the fire, when the butter melts add the flour and stir until it doesn't stick to the bottom of the pan, add a pinch of salt mix and turn off the heat and let it cool
- Once cool, add the beaten eggs, mixing slowly until the dough is incorporated, place in a pastry bag.
- On a baking sheet lined with parchment paper, model rotating in circles twice, forming a nest and bake at 200 degrees for 25 minutes.
- For the cream, mix the yolks, sugar and vanilla and beat until light, Add 2 tablespoons of cornstarch and flour, mix well
- Bring the cream and milk to a boil and when it starts to boil add the beaten egg yolks, stirring constantly until it thickens, transfer the cream to a bowl and cover with plastic wrap and let it cool.
- Remove the Zeppoles from the baking dish and fill with the cream, Sprinkle with icing sugar and decorate with cherry.
