  • 100 g butter 100 g sugar Zest of 1 lemon 1 medium egg 150 g rice flour 50 g corn starch1 dessert spoon
  1. Work the butter with the sugar and the lemon zest until creamy. 2. Add the lightly beaten egg and the flours. Mix everything. 3. Make 23 balls with the dough. 4. Place the balls on a tray lined with parchment paper or a non-stick sheet. 5. Press each ball with a fork to form a four-line pattern. 6. Bake in a preheated oven at 180ºC for approximately 17 to 18 minutes. 7. Allow to cool before serving or store in an airtight container.
