  • Demerara sugar3 tablespoon
  • Vegetable milk250 ml
  • Olive oil1/3 cup
  • Unsweetened Shredded Coconut100 g
  • Chemical Yeast1 tablespoon
  1. In a blender add the eggs, demerara sugar, vegetable milk, and olive oil.
  2. Beat well and add the unsweetened grated coconut and chemical yeast, stir with a spatula.
  3. Take to preheated oven at 180 degrees for approximately 35 minutes.
  4. OBS.: You can replace demerara sugar with xylitol, or coconut sugar. And you can substitute olive oil for extra virgin coconut oil.
  5. CALDA RECIPE: In a pan I added: 50 ml plant-based milk 1 tablespoon demerara sugar 2 tablespoons unsweetened shredded coconut Mix in low fire and put over the still hot cake. Before, with a toothpick make holes to absorb the syrup.
