  • Coconut oil0.5 cup
  • Cocoa powder3 tablespoon
  • Defatted, unsweetened desiccated desiccated coconut90 g
  • Coconut Flour1 tablespoon
  • Brown sugar5 tablespoon
  • Dark chocolate80 g
  • Coconut milk2 tablespoon
  • Chemical Yeast1 tablespoon
  1. Beat the eggs, sugar, cocoa, coconut oil, grated coconut and coconut flour in a blender until obtaining a homogeneous mixture.
  2. Transfer the mixture to a container and gently incorporate the yeast.
  3. Distribute the dough in cupcake molds and bake in a preheated oven at 180ÂșC for about 25 minutes (do the toothpick test)
  4. For the frosting, melt the semisweet chocolate in the microwave, 40 seconds at a time and stir so it doesn't burn.
  5. When the chocolate is melted, add the coconut milk and mix well.
  6. Cover the muffins with the frosting and sprinkle a little coconut on top to decorate.
