- 70% cocoa chocolate100 g
- Ghee Butter50 g
- Xylitol5 tablespoon
- Melt the chocolate in a bain-marie along with the butter.
- Separately, beat the egg whites.
- In another container, beat the yolks with xylitol until they lighten a little.
- Add the yolks to the chocolate.
- Add the egg whites little by little to the mixture so as not to lose volume.
- Let it freeze for 4 hours.
