- Sugar01 cup
- Oil1/2 cup
- Coconut milk200 ml
- Corn kernels (taken from the cob or canned)300 g
- Wheat flour01 cup
- Chemical Baking Powder01 tablespoon
- Fresh grated coconut to taste
- In the blender, beat for 4 minutes: the eggs, sugar, oil, coconut milk and corn kernels.
- Add the flour, baking powder and use the pulse mode of the blender just to mix.
- Place in greased and floured mold.
- Sprinkle with grated coconut and bake in a preheated oven for 40 minutes or until golden.
- Use coconut to decorate too!
