- Corn Starch40 g
- Milk500 ml
- Vanilla Essence1 teaspoon
- Sift the gems.
- Mix the yolks with the sugar.
- Add the milk, cornstarch and vanilla. Stir until a homogeneous mixture is formed.
- Place over medium heat and stir until it starts to bubble. Stir for another 2 to 4 minutes to cook.
- Put it in a refractory and take it to the fridge (after cooling) covered with plastic film, cover very close to the cream, leaving no air so as not to release water. After 1 hour, remove from the fridge and mix for a few minutes until smooth again. Can be used to fill cakes, toast, donuts etc.
