Beat the egg and yolks and then sieve so that the film that protects the yolk is separated from the mixture.
Add the milk, condensed milk and vanilla essence to the egg mixture and beat well.
* with a fouet you incorporate air into the mixture and make it more aerated *
In a pan add the sugar and let it melt until it forms a caramel.
*Tip: hold your anxiety and let the fire do its thing, don't move the caramel so it doesn't crystallize*
Add the caramel in a pudding mold (or in the mold of your choice) to grease the bottom and then add the pudding mixture.
Bake in a bain-marie at 180°C for about 30 minutes or until cooked.
Let it freeze if you can and good appetite!
