Coconut manjar with plum syrup

1. Coloque o açúcar em uma panela e leve ao fogo até fazer uma calda com cor de caramelo.

2. Adicione a água com cuidado (ela pode espirar) e espere que ela derreta o açúcar novamente (a calda vai endurecer quando você adicionar a água).

3. Quando começar a ferver, coloque as ameixas e misture bem.
4. Desligue e deixe esfriar.

2. Add the water carefully (it may squirt) and wait for it to melt the sugar again (the syrup will harden when you add the water).

1. Em uma panela, leve ao fogo o leite, o coco ralado, o leite de coco, o açúcar e o amido de milho, mexendo até chegar ao ponto de mingau (cerca de dez minutos).

2. Transfira para uma forma de pudim, ou de sua preferência (com furo no meio) untada com óleo.

3. Deixe esfriar e leve à geladeira até firmar (aproximadamente duas horas).

4. Desenforme e regue com a calda.

5. Conserve na geladeira e sirva gelado.

1. In a pan, bring the milk, grated coconut, coconut milk, sugar and cornstarch to the boil, stirring until it reaches the point of porridge (about ten minutes).

2. Transfer to a pudding mold, or one of your choice (with a hole in the middle) greased with oil.

3. Let cool and refrigerate until firm (approximately two hours).

4. Unmold and drizzle with the syrup.

5. Store in the fridge and serve chilled.
