Put the chocolate to melt in water or coffee, in a bain-marie, stir constantly. cool. Beat the yolks in there, one at a time, beating well between each one.
Add the vanilla or rum. Beat the egg whites and mix carefully into the chocolate, mixing without beating.
Refrigerate in individual bowls for at least 8 hours or overnight. Serve with a spoonful of curd on top, it will be delicious.
