- semisweet chocolate200 g

- cachaça (you can replace it with Tequila, Whiskey or Cognac) - optional1 tablespoon
- refined sugar2 tablespoon
- Separate the whites from the yolks;
- Pass the yolks through a sieve, place in a bowl, add the cachaça and beat with a fouet until it becomes slightly whitish. Reserve;
- Chop the chocolate and melt in a water bath. Let it cool until it reaches room temperature and mix it with the egg yolks. Reserve;
- Now let's prepare the egg whites: start beating the egg whites in the mixer, when they start to foam add half the sugar and continue beating. Increase the speed of the mixer, and when the whites start to firm up, add the other half of the sugar and beat until the point of snow. I swear it's very quick and easy, believe me!!
- Add 1/3 of the egg whites to the chocolate and yolk mixture and mix well until everything is mixed. Now add the rest of the egg whites and stir gently with a spatula, moving from bottom to top, until well incorporated. Put in the fridge for 3 hours.
