Passe as gemas por uma peneira, coloque em um bowl, adicione a cachaça e bata com um fouet até ficar levemente esbranquiçada. Reserve;

Agora vamos preparar as claras em neve: comece a bater as claras na batedeira, quando começarem a espumar acrescente metade do açúcar e continue batendo. Aumente a velocidade da batedeira, e quando as claras começarem a firmar acrescente a outra metade do açúcar e bata até o ponto de neve. Juro que é muito rápido e fácil, acredite!!

Junte 1/3 das claras em neve à mistura de chocolate e gemas e mexa bem, até misturar tudo. Acrescente agora o restante das claras e mexa delicadamente com uma espátula, com movimentos de baixo para cima, até agregar bem. Leve à geladeira por 3 horas.

Add 1/3 of the egg whites to the chocolate and yolk mixture and mix well until everything is mixed. Now add the rest of the egg whites and stir gently with a spatula, moving from bottom to top, until well incorporated. Put in the fridge for 3 hours.
