  • Semisweet Chocolate200 g
  • Unsalted butter100 g
  • Eggs4 unit(s)
  • Sugar4 tablespoon
  • Coffee1/3 cup
  1. Separate the whites from the yolks
  2. In a small pan, place the chocolate, butter and coffee. Take to the low fire, always stirring until the mixture is homogeneous. Turn off the heat and set aside.
  3. In the larger bowl of the mixer, add the sugar and the egg yolks and beat until you get a whitish cream. Add the melted chocolate and beat well.
  4. Wash and dry the mixer blades well. In the smaller bowl, place the egg whites and beat until stiff. Add ⅓ of the egg whites to the chocolate mixture and mix well. Incorporate the rest of the egg whites gently, from bottom to top without beating too much.
  5. Transfer the mousse to individual cups or bowls or a large bowl and refrigerate for at least 6 hours. Serve chilled. Add chocolate shavings to decorate
