- Wheat flour260 g
- Icing sugar100 g

- Butter130 g

- Crystal sugar300 g
- Water160 ml
- Sour cream200 ml
- Butter1 tablespoon
- Dark chocolate500 g
- Whole milk250 ml
- Dough: in a bowl combine the wheat flour, icing sugar, salt, 130g of butter and the egg. Work this mixture until a homogeneous mass is formed. Let it rest for 20 minutes in the fridge. Open the dough in the shape, and return to the fridge until the moment of baking, which must be in a preheated oven at 200° for approximately 20 min.
- Caramel: in a pan put the sugar, and enough water to “hydrate” all that sugar, take it to the fire until it reaches an amber caramel color, add the spoon of butter and the milk cream already heated to the sugar, mix and slide to reduce the half. Reserve
- Chocolate ganache: in a bowl add the chocolate and milk, take it to the microwave or bain-marie until they melt. Mix vigorously. Reserve.
- Assembly: with the pie already baked, apply the caramel, take it to the fridge for 30 min. Then finish filling with the chocolate ganache. Place in the fridge until serving time. Finish with fleur de sel or cocoa powder.
