Sugar to caramelize
Bring 3/4 of a liter of milk to boil with the sugar, cinnamon and lemon zest.
Dissolve the cornstarch in the rest of the milk and mix with the yolks.
When the first mixture starts to boil, remove from the heat and gradually incorporate the yolk mixture, stirring carefully to avoid curdling, until it forms a cream.
Divide into portions in ramekins and place in the fridge.
When serving, remove from the fridge, sprinkle sugar on top and caramelize with the help of a blowtorch.
