- Concentrated cashew juice1000 ml
- Sugar300 g
- Colorless gelatin18 g
- Frozen berries600 g
- Lemon Juice20 ml
- Dilute the gelatin in 1/3 of the cashew juice until translucent. Heat up to 70 degrees
- Add 200g of sugar to the remaining juice and stir until dissolved.
- Add the hot gelatine in the cold juice and homogenize, provide us with small glasses of drinks and freeze.
- Make a berry coulis with the lemon juice and the rest of the sugar and the berries.
- Place the coulis over the cream and decorate and serve well chilled!
