  • BASE: Cornstarch biscuit300 g
  • Unsalted butter150 g
  • FILLING: condensed milk can2 unit(s)
  • Small banana5 unit(s)
  • Fresh cream (or "amelia" chantymix)300 ml
  • Sugar (only if using fresh cream)40 g
  • Cinnamon Powder1 coffee spoon
  1. DOUGH: Process the biscuit until it forms a fine crumb, add the cinnamon and put the butter at room temperature, throw it over the crumb and mix with your hands until you get a dough.
  2. With this dough line the bottom of a removable rim shape, press it and go up the sides a little.
  3. Take it to the freezer for 20 minutes, then bake it in the preheated oven at 220° for 10 minutes.
  4. FILLING
  5. Cook condensed milk under pressure for 30 minutes. Note: don't forget to put water in the pan! Take the label off the can and put vinegar in the pan so it doesn't turn all black later. I LIKE TO COOK IT 1 DAY BEFORE, BECAUSE IT IS IMPORTANT TO OPEN THE CAN AFTER IT IS VERY COLD. You can also use store-bought dulce de leche as long as it is consistent.
  6. Let's ride! On top of the biscuit dough that is still in the mold, place a thin layer of dulce de leche. Cut some bananas into slices and start making a wall. (If you have questions about this process, I have a video on my insta that shows @jejemvb well). Now we can place bananas over the center of the mold, right? Then add another layer of dulce de leche.
  7. While you are doing all this assembly, you can already put the cream to beat. I suggested that you buy Amélia's chantymix because it's a step away from the milk cream, it's quite boring. So to make chantimix easier it helps and it's not that bad. Beat it until it's filmy. (Usually it already comes with sugar, try it first).
  8. It hit? Throw it on top of the banoffee and take it to the fridge for at least 2 hours, I particularly like to put it in the freezer because I like it very cold!!
  9. Now all you have to do is carefully unmold and use your creativity to decorate.
