- Make the apple jam first: wash, peel and chop the apples. Place in a pan along with the lemon juice, sugar and cinnamon. Let it cook stirring constantly until it dries and becomes like a jelly. Reserve and let cool.
- Make the vanilla cream: in a pan place the condensed milk, dissolve the cornstarch in the milk and mix, the yolks, pass through a sieve to remove the skin, mix together and add the vanilla. Cook over heat, stirring constantly, until creamy. Reserve and let cool.
- Make the apple jam first: wash, peel and chop the apples. Place in a small pan along with the lemon juice, sugar and cinnamon. Let it cook stirring constantly until it dries and becomes like a jelly. Reserve and let cool. Make the vanilla cream: in a pan place the condensed milk, dissolve the cornstarch in the milk and mix, the yolks, pass through a sieve to remove the skin, mix together and add the vanilla. Cook over heat, stirring constantly, until creamy. Reserve and let cool. Assembly: turn on the oven and preheat to 180 degrees. Take a sheet of ready-made puff pastry and fill each one with a little of the apple jam. This candy must be very cold. Close in a triangle shape and brush egg yolk on top. Place in a greased shape and bake until golden. Remove from the oven and wait for it to cool down a bit.
- Place the vanilla cream in a piping bag fitted with a pitanga nozzle. Decorate the candy as you like. Sprinkle with icing sugar.
