Spread the dulce de leche on one part of the biscuit, fit the popsicle stick and then join with another biscuit.
Clean the dulce de leche around the biscuit so it doesn't get in the way when bathing. Repeat the process with the desired amount.
Melt the chocolate and then cool it until it reaches a temperature of 40 or 45 degrees.
Or use fractional chocolate frosting so you don't need to temper the chocolate.
Carefully dip all the alfajores in melted chocolate and place them to dry on an aluminum baking sheet. If you want, throw confectionery over it before it dries.
