- Medium eggplant1 unit(s)
- Olive oil to taste
- Salt and pepper to taste
- Wash the eggplant well and cut into medium-thick slices (about a finger)
- In a bowl, place the slices, a little olive oil, salt and pepper to taste. Mix with your hands massaging the eggplant to spread it well.
- Heat a drizzle of oil in a skillet over medium to high heat.
- Place the slices in the skillet so that they all touch the bottom and let them fry until golden.
- Flip each one over and let it brown too.
- The longer it stays in the skillet, the softer it gets. I prefer a texture a little more al dente, so I leave it for 2 to 3 minutes on each side and that's it.
- Serve as a side dish with the dish of the day.
