- Coconut oil0.5 cup
- Cocoa powder3 tablespoon
- Defatted, unsweetened desiccated desiccated coconut90 g
- Coconut Flour1 tablespoon
- Brown sugar5 tablespoon
- Dark chocolate80 g
- Coconut milk2 tablespoon
- Chemical Yeast1 tablespoon
- Beat the eggs, sugar, cocoa, coconut oil, grated coconut and coconut flour in a blender until obtaining a homogeneous mixture.
- Transfer the mixture to a container and gently incorporate the yeast.
- Distribute the dough in cupcake molds and bake in a preheated oven at 180ÂșC for about 25 minutes (do the toothpick test)
- For the frosting, melt the semisweet chocolate in the microwave, 40 seconds at a time and stir so it doesn't burn.
- When the chocolate is melted, add the coconut milk and mix well.
- Cover the muffins with the frosting and sprinkle a little coconut on top to decorate.
